The recommended version of PHP for Joomla 3 is PHP 8.0.
When you change the version of PHP, check that the same PHP extensions are enabled, especially extensions related to XML. Those selections do not get transferred automatically.
It might be better to stay with PHP 8.0 until you update the site to Joomla 3.10.12 and then to Joomla 4.
